Le chef Manuel Steigmeier, membre de Hotel &amp; Gastro Union, soci\u00e9t\u00e9 soutenue par ALIGRO, fournit ses conseils pour un menu de P\u00e2ques gourmand.<\/strong><\/p>\n<p>G\u00e9rant du restaurant Fahr \u00e0 K\u00fcnten (AG) o\u00f9 il r\u00e9gale ses clients avec des mets aussi color\u00e9s que raffin\u00e9s, le chef Manuel Steigmeier a su d\u00e8s l\u2019\u00e2ge de six ans qu\u2019il voulait devenir cuisinier. Client r\u00e9gulier d\u2019ALIGRO Spreitenbach, il y appr\u00e9cie l\u2019accueil et le grand choix de produits.<\/p>\n<p>Dans le milieu de la restauration, l\u2019agneau classique ou le cabri se retrouvent sur de nombreuses cartes, mais la tendance va \u00e9galement de plus en plus du c\u00f4t\u00e9 du poisson puisque de nombreux restaurants le proposent dans leur menu.<\/p>\n<p>ALIGRO propose pour l\u2019occasion tous les mets traditionnels dont l\u2019agneau et le cabri, ainsi que de tr\u00e8s nombreuses pi\u00e8ces de b\u0153uf et de poulet. Les poissonneries ALIGRO offrent un grand choix de poissons frais qu\u2019il est tout \u00e0 fait possible d\u2019ajouter au menu pour surprendre les clients. A ce propos, <a href=\"https:\/\/www.aligro.ch\/pages\/fr\/news\/un-chef-etoile-partage-sa-passion-pour-le-poisson\/\">retrouvez ici<\/a> les conseils du chef \u00e9toil\u00e9 Bruno Keist, pour des plats de poisson qui feront tout leur effet.<\/p>\n<p>Le cuisinier appr\u00e9cie \u00e9galement la vari\u00e9t\u00e9 qu\u2019offrent les l\u00e9gumes\u00a0: \u00ab\u00a0On peut magnifiquement mettre en sc\u00e8ne un l\u00e9gume de saison et le proposer comme alternative \u00e0 la viande, par exemple une betterave d\u00e9shydrat\u00e9e sur un topinambour cuit au sel ou un radis noir fait sur le Green Egg (ndlr\u00a0: sorte de grill)\u00a0\u00bb.<\/p>\n<p>Et pourquoi ne pas faire un brunch de P\u00e2ques\u00a0? \u00ab\u00a0On peut proposer un choix de diff\u00e9rents pains faits maison, de la confiture, des fruits, de la viande et des l\u00e9gumes ainsi qu\u2019un met copieux et gourmand tel que des \u0153ufs B\u00e9n\u00e9dicte\u00a0\u00bb explique le chef.<\/p>\n<p>Manuel Steigmeier pr\u00e9conise de garder une certaine coh\u00e9rence dans le menu et de pr\u00e9parer des produits de qualit\u00e9, s\u00e9lectionn\u00e9s avec soin : \u00ab Moins, c&rsquo;est souvent plus. Il est pr\u00e9f\u00e9rable d&rsquo;opter pour des plats plus simples mais tr\u00e8s bien cuisin\u00e9s. Il est \u00e9galement important de rester fid\u00e8le \u00e0 sa ligne directrice et \u00e0 ses convictions \u00bb.<\/p>\n<p>Que mange le chef \u00e0 P\u00e2ques\u00a0? \u00ab\u00a0Ce que je pr\u00e9f\u00e8re, c\u2019est un bon jarret d\u2019agneau. Je raffole des plats mijot\u00e9s dans une bonne sauce\u00a0\u00bb. Sa cuisine est souvent agr\u00e9ment\u00e9e d\u2019\u00e9pices au go\u00fbt franc telles que le poivre et les herbes fra\u00eeches. \u00ab\u00a0Et bien s\u00fbr, de bons l\u00e9gumes \u00bb ajoute-t-il.<\/p>\n<p>Pour accompagner le repas, un vin mousseux est bienvenu\u00a0; un champagne ros\u00e9 cors\u00e9 pour le gigot d\u2019agneau ou un champagne blanc de blanc qui s\u2019accorde bien avec une vari\u00e9t\u00e9 de produits.
